PREFACE - HRA

In addition to upgrades of previous chapters, the text features many innovations. For example:

  • Each chapter concludes with Internet sites that provide reference sources for students to research and further study the topics.
  • Twelve chapters contain pertinent Ethics case studies and four new chapters contain challenging business case studies.
  • The four new chapters cover
    • Merchant accounts
    • Forecasting and budgeting
    • Sarbanes-Oxley Act and SEC
    • Setting up an Internet store to meet today’s alternative method of doing business.

Actual financial statements of six well-known hotel/restaurantcompanies representing divergent domains of hospitality are integrally presented throughout the text in relevant chapters, making the learning process more interesting and applicable to the real world of business.

Today’s business technology and competitive environment demand much more from hospitality accounting texts than just focusing on the traditional methods of accounting. It is imperative that accounting is not treated as a glorified bookkeeping course; debits and credits, journalizing, and lackluster accounting processes are not enough to meet today’s business and employer standards. Computers, point-of-sale devices, the Internet, and other technology cannot be ignored in the hospitality industry. It is essential that accounting texts realize and accentuate the interrelationship of business principles and accounting. Credit cards now dominate the customer payment method, budgeting and forecasting are critical in the competitive hospitality industry, governmental agencies affect financial reporting, and the Internet is now a part of doing business or communication.

The revised edition of Basic Hotel and Restaurant Accounting accepts this challenge.

The revisions to Basic Hotel and Restaurant Accounting are a result of suggestions and comments from my valued customers. The following is a synopsis of this new edition.

Carrying on with the text’s tradition, the following continue to be an integral part of Basic Hotel and Restaurant Accounting:

  • Case Studies: These cases are at the end of each chapter for Chapters 1 to 12.
  • Solutions Manual: This instructor’s manual presents not just the answers but comprehensive and fully worked out solutions with step-by-step demonstrations and labels.
  • Student Exercise Book: This optional workbook contains assignments, problems, and working papers to accommodate each chapter of the text.

Basic Hotel and Restaurant Accounting continues to address the needs of the hospitality industry and academia by using an organized writing style that is easily understandable by students, yet sufficiently comprehensive to provide the vocabulary and financial skills required to achieve success.
